There is no need to manually backup the volunteer data. All the Check-In and Check-Out details are automatically saved in Salesforce under the Timesheet Details tab.
If you see any changes in the volunteer hours you can create reports related to volunteers and timesheets details. And talk to the volunteers if they have not signup for the Jobs or and Shifts regularly.
