As a TimeTracker user, you cannot add or remove Projects, Task, or Work-types. Only Salesforce administrators at your org can add/remove Projects, Task, and Work-types in Salesforce.
Please inform the Salesforce Administrator at your org if you want to remove any Project, Task, and Work-types from the list.
